Beef and Bacon Burger

With just 400g minced beef, an onion and three rashers of chopped smoked, streaky bacon you can make these burgers. They’re obviously gluten free (no breadcrumbs) and don’t need any egg to bind them together. The onions and bacon keep the burger moist and juicy and add lots of flavour. Just fry the onions and bacon until soft and then cool completely. Combine with the beef, form into burgers and fry for 3-4 minutes on each side, or until fully cooked through.

Coconut, Ginger and Date Energy Squares

Just blitz 100g desiccated coconut, 250g pitted dates and 1-2 chunks of stem ginger from a jar until smooth. Then press the sticky crumbs into a small, cling-film lined dish. Chill for a couple of hours and cut into bars. A natural, healthy and tasty treat.

Just blitz the lot in a food processor for about 45 seconds - the bananas can be thrown in straight from the freezer - and you get a creamy, silky-smooth ice cream with an addictive salty-sweet flavour.

Roast Lamb with Garlic and Rosemary

Lamb can be quite a fatty meat, which is good in this case as the melting fat bastes the meat as it cooks, keeping it moist. We’ve used a half leg of lamb for our roast and made little cuts in the meat with a sharp knife. These cuts are then stuffed with slices of garlic and rosemary sprigs. Roast for 2 hours at 200ºC or gas mark 6 for a juicy, aromatic roast lamb dinner. You don’t have to rest the joint on carrot slices, but they’ll absorb the flavours of the lamb as they roast.
