Thalia's cheese & bacon pie recipe

Ingredients (for 4 people):
25 Rashers of bacon
250g Feta cheese
250g Mature cheddar cheese
6 to 8 Sheets of Filo pastry
1 Beaten egg
3 tsp Olive oil
350g Greek yogurt
1 Lemon

Method:


1.Heat the oil on a low heat in a frying pan.
2.Chop the bacon rashers into small squares and place into a large frying pan on a low heat. Squeeze the lemon over the bacon whilst it cooks.
3. Chop the feta and the mature cheddar into small cubes.
4. Mix the cheese and bacon together in a bowl.  Add the beaten egg and Greek yogurt and blend it together.
5. Overlap the filo pastry sheets across the bottom and sides of a dish and then place the cheese/bacon mixture inside. Fold the filo sheets over the top to make a parcel.
6. Place in the oven at 180°c and cook for 1hr and 30mins.

Serve

with a summer salad.
