The 45-year-old actress was the toast of the red carpet in the south of France yet again last night, as she stepped out in a fairytale Dior ballgown made up of intricate coloured flowers and leaves.
But while the gown drew gasps from the hordes of fans who'd queued for hours in the dismal weather to see the stars, it was Nicole's sleek ponytail with a huge quiff that really caught everyone's attention.
In a new twist on this season's must-have hair trend, the star's hairstyle was slicked back at the sides and pinned underneath her quiff - which was then pulled in to a pony at the base of her neck.
From the front it appeared that Nicole was simply wearing her tresses in a volumised pony, but it wasn't until she turned to the side that the actual style was revealed.
And while the unusual style might look tricky to recreate, Nic's look is relatively easier to follow as it simply involves sectioning off the hair and pinning the sides under the pony.
The actress, who is residing on the judging panel at this year's prestigious film festival, didn't stop there with her high-fashion look either - showcasing some of the hottest beauty trends with her make up too.
With richly-coated, fuchsia-pink lips, Nicole wore a dewy, flawless looking foundation to give her a radiant finish on her skin and a light-grey liner around her blue eyes.
Making sure not to let her accessories overshadow her look, she added classic diamond stud earrings and coral pointed court shoes to complete her look.
The actress stole the show at the opening ceremony at Cannes last night, as she joined the likes of Steven Spielberg and Audrey Tautou on stage at the festival.
Earlier on in the day, the A-lister wowed again in a fitted black pencil dress with a structured, scoop neck, wearing her strawberry-blonde locks in loose curls and fixed with a hair bow.
