Radishes

We might slice up a radish or two and add to a crunchy salad, but have you ever cooked them? Erin, from the blog Naturally Ella, created this recipe for Buttered Radishes with a Poached Egg.


“The slight earthy taste of the radish lightly cooked in butter and thyme, topped with a perfectly poached egg,” Erin writes. “It’s amazing.” Erin says that lightly cooking the radishes gives it a flavour of “all radish without the bite of the raw version.” Definitely one to try.

Goat’s cheese is soft and fluffy with a mild, creamy flavour. So although it doesn’t ooze and melt over toast like Gruyère or Cheddar, it gives cheese on toast a completely different texture.

Amelia, who writes at the blog Simple Provisions, came up with this goat’s cheese and avocado on toast to remind her of the breakfasts she used to eat in Melbourne, Australia before she moved to New York. She calls it Homesick Toast. Go check it out.

Oh yes. Wild mushrooms, garlic, onions and herbs all on toast with melty cheese. Rich and warming, these Wild Mushroom Melts were created by Rosie, from the blog The Londoner.

If you need more inspiration for your mushrooms on toast, they work perfectly with garlic, thyme, parsley, lemon, ham and egg. And cheese. They’re excellent with cheese.

Liver

Some people are still a bit squeamish when it comes to cooking with liver, but there’s no need to be. It’s cheap and nutritious - and as long as it’s not overcooked, it’s sweet and tender, when cooked with onions and bacon and piled onto fresh toast.

Just chop it up and fry with chopped onions, bacon and a pinch of dried sage. Add a splash of port or red wine towards the end of cooking (a few minutes) and pile onto crisp slices of toast.

Banana, peanut butter and honey are a bit of a match made in foodie heaven and Erin, from the blog The Law Student’s Wife has added some granola in the mix, too. She writes: “It’s healthy and filling, crunchy and creamy, and especially gratifying when eaten from paper towels while sitting on one’s kitchen counter.”
