Dominic's recipe for Aunt Regina's beef

Ingredients (for 4 people):
For the beef:
1 Cheap cut of beef (skirt or brisket) enough for four.
2 Large bulbs of garlic peeled and crushed
4 tbs Salt
1 Glass red wine

For the Carrot Tzimmes with a savory crumble topping:


8 Large carrots thickly sliced.
2 tbs Brown sugar
2 tbs Honey
225g Flour
115g Butter
Fresh parsley or any fresh herbs you like

Method:
The beef:
1. Crush all the garlic with the salt until you have a paste. Rub this all over the beef. 
2. Place into a bowl, cover in cling film and put in the fridge overnight.
3. In the morning, place the beef in a casserole dish with a tight fitting lid, pour over the wine and place the lid on. You can wrap the lid in foil for extra tightness.
4. Place in an oven on its lowest setting and cook for 12 hours.

Carrot Tzimmes:


1. Steam the carrots for 5 minutes or until they are beginning to soften, then place them into a roasting dish and cover with the sugar and honey.
2. In a bowl, crumble the flour and butter with your fingertips, adding the herbs and season as you go.  Pour this onto the carrots and press down firmly. 
3. Roast in an oven for 20 minutes or until the topping is golden.
