You will need
1.2kg carrots, peeled and halved lengthwise, quartered if very large
4 tbsp olive oil
40g unsalted butter
1 tbsp light muscovado sugar
3 tbsp finely chopped parsley (optional)

Method
1.Preheat the oven to 190C/gas mark 5. Put the carrots in a roasting tin, trickle over the olive oil, season, and stir to make sure everything is well coated.

2.Roast for around 25 minutes, turning them over once or twice, until tender, and just starting to take on some colour. Remove the tin from the oven, dot with the butter and sprinkle on the sugar.

3. Toss to coat, then roast for a further five to 10 minutes, until lightly caramelised.

4.Toss with the parsley, if using, season to taste, the serve.
