Fed up of porridge, cereal and toast? Pimp up your breakfast with one of these delicious meals to mix it up in the morning

According to research, as many as one in three of us skip breakfast each day. But there’s no need for that.

Whether you’re running late, fancy a lie in or just don’t feel like cooking, we’ve rounded up nine great breakfasts that you can fit into any morning routine…

When you’re late for the school run

Keep a batch of these Kitchen Sink Egg Muffins in the fridge and you’ll have mini omelettes packed with meats and veggies to feed your little ones before they go to school. Eggs contain loads of nutrients such as B vitamins, protein and choline.

Choline has been linked to better concentration and memory, so they’re perfect before school. And it gets better: you can take care of any leftovers you have, too, when you make them. Check out the recipe on Sarah Lynn Smile.

When you don’t want any washing up

Genius! Nagi from the blog Recipe Tin Eats has created these No Washing Up Cheese and Ham Bowls. You can layer ham, cheese and eggs - and whatever else you fancy - in a hollowed out bread roll and bake. They’re ready in 15 minutes.

“You can make loads in one go - as many as you can fit in your oven,” Nagi writes. You just eat them with your hands. A great idea if you have friends or family staying over and want to head straight out after breakfast, without having to wash up.

When you get up at the weekends and it’s nearly lunchtime

If you’ve had a long lie-in, you might as well opt for something a bit more substantial and get on with brunch. This Breakfast Strata from the blog A Beautiful Bite can be prepped the night before, and kept in the fridge overnight.

You just need to stagger to the kitchen, switch on the oven and bake it until it’s ready. Add whatever you fancy - cheese, veggies, leftover meats. Another breakfast that’s a great idea for using up any leftover stale bread and whatever veggies you have in the fridge.

When only a burger will do…

Breakfast Burgers (How Sweet It Is)

We all know THOSE mornings. Jessica, from the blog How Sweet It Is created this Breakfast Burger with Maple Aioli. “No, not like burgers for breakfast,” insists Jessica, “but burgers stacked with breakfast foods.”

This glorious invention consists of beef burgers, cheese, bacon and a fried egg squeezed into a toasted English muffin with a maple syrup and mustard aioli. “I don’t know,” Jessica wonders. “Does that mean we can eat them for breakfast? Wouldn’t stop me.” Wouldn’t stop us either.
