She calls them Idaho Sunrise - and in 20 minutes you’ll have a baked potato with a runny-yolked egg inside. And breakfast? Sure thing. “Pop this one in the oven in the morn,” she says, “and you’ll be eating breakfast like a champ.”

Here’s a baked potato that’s super healthy. It’s vegan, dairy-free, gluten-free and suitable for those on a paleo diet, too.
