A food additive commonly used as a food thickening agent (for example, in mayonnaise and sauces), and as a stabiliser (in cosmetic products) to prevent ingredients separating. It can also be used in cooking to bind and thicken a mixture as a replacement to flour or gluten products. However, as xanthan gum is made from corn, wheat, dairy or soy, those with intolerances to these foods should be cautious.
