Pri's Chicken Makhani recipe

Ingredients (for 6 people):

500g Chicken (on bone or diced)
25g Unsalted butter
1 can Chopped tomatoes
4 small Green chillies
2.5cm Fresh ginger
1 tsp Ground cumin
1 tsp Ground coriander
1 tsp Kasuri Methi (Dried Fenugreek leaves)
Salt to taste

For the Marinade Mix:
2 tbsp Lemon juice
1 tsp Garam masala
1 tsp Garlic paste (grind up 6 cloves of garlic with a little sea salt)

For the garnish:


Chopped coriander
Sliced green chillies

Method:


1. Mix the chicken with the marinade mix and put in the fridge for an hour.
2. An hour later bake the chicken in the oven at 180°c for 20 minutes.
3. In a pan, heat the butter until it melts. Then add the chopped ginger and chillies and fry for a minute. Now add the chopped tomatoes and the rest of the spices. Cook on a medium heat for 5 minutes.
4. Add the chicken, cook for about 20 minutes with the lid on, stirring occasionally.
5. Add the Kasuri Methi and cook for another 5 minutes. Garnish with chopped coriander leaves and fresh green chillies.

Serve with Rice or Roti (wholemeal flour flat breads).
