Tender and healthy monkfish marinated in a tasty sauce of Hellmann's Mayonnaise and herbs that's ideal for BBQ's.

Recipe ingredients:
800g monkfish loin
1 lemon
For the marinade:
1 dollop* Hellmann’s Real Mayonnaise
1 small bunch of rosemary
1 small bunch of parsley
1 lemon
1 tablespoon olive oil
Pepper
Recipe steps:
- In a medium sized bowl, mix together the rosemary, parsley, lemon juice and zest, mayonnaise and olive oil. Season with some pepper.
- Add the monkfish cubes to the marinade and leave to stand in the fridge for at least 20 minutes.
- Preheat a griddle pan or BBQ.
- Divide the monkfish between 8 medium sized skewers, place on the griddle or BBQ and cook for 4 minutes on each side until the monkfish is firm to the touch.
