    Monkfish & rosemary skewers

    Tender and healthy monkfish marinated in a tasty sauce of Hellmann's Mayonnaise and herbs that's ideal for BBQ's.

    Serves:  4
    Preparation time:  30 min
    Cook time: 10 min

    Recipe ingredients:

    800g monkfish loin
    1 lemon
    For the marinade:
    1 dollop* Hellmann’s Real Mayonnaise
    1 small bunch of rosemary
    1 small bunch of parsley
    1 lemon
    1 tablespoon olive oil
    Pepper

    Recipe steps:

    1. In a medium sized bowl, mix together the rosemary, parsley, lemon juice and zest, mayonnaise and olive oil. Season with some pepper.
    2. Add the monkfish cubes to the marinade and leave to stand in the fridge for at least 20 minutes.
    3. Preheat a griddle pan or BBQ.
    4. Divide the monkfish between 8 medium sized skewers, place on the griddle or BBQ and cook for 4 minutes on each side until the monkfish is firm to the touch.
    Serving suggestions: Serve with lemon wedges and a side salad.
