    Minted lemon fusilli

    Lemon, Courgette, Mint, Pea, Fusilli: Recipe

    You will need
    500g fusilli or any other short-shaped pasta, eg penne, farfalle
    Cooking spray
    2 garlic cloves, peeled and crushed
    4 spring onions, finely chopped
    2 courgettes, roughly grated
    200g fresh or frozen peas
    250g fat free natural fromage frais
    Finely grated zest of 1 lemon
    Small handful of fresh mint, finely chopped
    Salt and freshly ground black pepper

    Method
    1.Cook the pasta in a large saucepan of lightly salted boiling water for 10 to 12 minutes or until just tender. Drain and keep warm.

    2. Spray a large frying pan with low calorie cooking spray and place over a medium heat. Add the garlic and spring onions and stir fry for two to three minutes.
    3. Turn the heat to high and add the courgettes and peas. Stir and cook for a further four to five minutes or until the courgette has softened.

    4. Reduce the heat to low and stir in the fromage frais, lemon zest and mint. Add the drained pasta to the mixture, season and toss to mix well.
