You will need:
100g haggis
10 mini oatcakes
25g carrot julienne
15g butter
Salt and pepper
10 rosemary tops

Method:
1. Lay the mini oatcakes on a tray or serving platter.
2. Peel your carrot, square off the edges and cut thin slices, then cut these into fine julienne and cut them into short matchsticks.
3. Heat a small pan with 75ml of water, add the butter and seasoning, bring to the boil.
4. Place in the carrots and cook, allow the water to reduce, the butter will glaze the carrots.
5. Heat the haggis until piping hot.

6. Using a teaspoon, take about 10 grams of haggis and spoon onto oatcake. Garnish with the glazed carrot julienne. Finish with a small sprig of rosemary. Serve warm.
