    Hot rum banana flambé

    Hot Banana Flambe: Recipes

    You will need
    4 ripe bananas
    1 level tbsp light soft brown sugar
    finely grated zest and juice of 1 lime
    2 tbsp dark rum
    1 tsp ground cinnamon, to dust
    1 level tsp icing sugar, to dust
    200g fat free natural fromage frais, to serve
    Lime wedges, to serve

    Method
    1. Preheat the grill to high. Peel the bananas and cut them into six to seven centimetre diagonal slices. Line a grill pan with foil and place the banana slices in the pan.

    2. Sprinkle the banana slices with the brown sugar and lime juice and cook under the hot grill for three to four minutes until they are golden brown and the sugar is melted and bubbling.

    3. Meanwhile pour the rum into a warmed, large metal ladle. Transfer the bananas to a warmed serving plate. Set the rum alight and pour the flaming rum over the hot grilled bananas.

    4. Scatter over the lime zest and dust the bananas with the cinnamon and icing sugar.
