Healthy breakfasts you can make in less than 10 minutes

From delicious granola to hearty porridge and chilli scrambled eggs, expert food writer Jo Romero reveals how to make four different healthy breakfasts in no time

Fruity Granola
Team oaty granola with thick Greek yoghurt and chopped nectarines for a breakfast that almost feels as indulgent as a dessert. Stir vanilla seeds into the yoghurt if you have them handy for an extra twist. Serves 1, ready in 3 minutes.

Ingredients
large handful of granola
2-3 tbsp thick Greek yoghurt
1 ripe nectarine, stoned and chopped
1 tsp honey

Method
Crumble one third of the granola into the bottom of a glass and spoon over a tablespoon of the yoghurt. Sprinkle in the chopped nectarine and then repeat, until you have 2-3 layers in the glass. Top with some more chopped nectarine and drizzle with a little honey.

Spicy Scrambled Eggs with Turkey

This hot, protein-packed breakfast takes just 7 minutes to make. The chillies kick start the release of feel-good endorphins, while the spinach provides calcium and folate. Who said breakfast was boring?

Ingredients
half tsp butter, ghee or oil (whatever you prefer to use)
small handful chopped, cooked turkey
half a small red chilli, chopped
handful of baby spinach, roughly chopped
2 eggs
pinch of salt
handful fresh coriander, chopped

Method

Melt the butter in a medium-sized frying pan and add the turkey, chilli pieces and spinach, stir-frying for about 20 seconds. Turn down the heat slightly. In a bowl, beat the eggs and add a pinch of salt to season, before adding them to the pan. Gently fold the eggs with a spatula so that they cook evenly over a gentle heat. When they’re cooked to your liking, serve on a plate and scatter with the fresh coriander leaves.

Cheesy Mushroom, Spinach and Poached Egg
Eggs are a really great start to the day - they’re rich in protein and a good source of vitamins and natural fats. And there’s no reason you can’t enjoy them before you head out the door - this nutritious, vegetarian breakfast stack is ready in just under 6 minutes.

Ingredients
1 fresh egg
half teaspoon white wine vinegar
1 tsp olive oil or butter
1 flat mushroom, cleaned and trimmed
a few baby spinach leaves
1 thin slice of Cheddar
Salt and black pepper, for serving

Method
Heat the oil in a griddle pan and add the mushroom. Allow it to cook on one side while you get on with preparing the egg.

Boil the kettle and half-fill a medium-sized saucepan with the boiling water. Switch on the heat, and crack the egg into a ramekin or small bowl. When the water is boiling again, trickle in the vinegar and stir the water quickly with a fork or whisk, to form a vortex. Quickly slip the egg into the water near the surface so that the white swirls back in on itself to seal the egg (this will give you fewer stringy bits). Simmer for three minutes. Meanwhile, flip the mushroom over to the other side.

After a couple of minutes, lay the mushroom on a plate and arrange the cheese and spinach leaves over the top. As soon as the egg’s time is up, lift it out of the hot water, drain on kitchen paper and position the egg on top. Sprinkle with a little salt and pepper and eat straight away.

Spiced Plum Porridge
It’s thought that oats are good for heart health, help regulate mood and also contain fibre - so they make a perfect breakfast. Add some chopped seasonal fruit and a sprinkling of cinnamon and you’ve got this warming dish in less than 3 minutes.

Ingredients
45g porridge oats (gluten free varieties are available if you need them)
180ml milk
1 ripe plum, stoned and roughly chopped
half a teaspoon cinnamon
1 teaspoon of honey

Method
Pour the oats into a bowl and add the milk and chopped plum pieces. Microwave on high for 2-3 minutes (depending on your microwave) and then sprinkle over the cinnamon. Add a little more milk if you need to, give it a stir and then drizzle with honey.
