Griddled Courgette Ribbons: Recipes

You will need
3 courgettes, yellow or green
100ml extra-virgin olive oil
4 cloves garlic, thinly sliced
1 red chilli, halved, deseeded and thinly shredded
A few sprigs of basil, stalks removed
Juice of 1 lemon

Method
1. Slice the courgettes lengthways, using a potato peeler, then brush the sliced with oil. Heat a griddle pan on high and cook the courgette ribbons in batches, for around a minute on each side, until striped golden. Put in a bowl.
2. Heat the rest of the oil in a small pan, then add the garlic and chilli. Heat gently for two minutes, before adding the basil, mint and lemon juice. Season the courgette ribbons with a little sea salt and pepper, and pour over the dressing. Leave to marinade for around one hour.
