    Fish marinade recipes: four of the best

    A taste of Vietnam - use with sea bass, tuna or salmon

    1 trimmed stalk of lemon grass, sliced into rings

    5cm piece of fresh ginger peeled and sliced

    2tbsp ­ fish sauce

    1tbsp sesame oil

    1 spring onion, trimmed and sliced

    1 clove garlic, peeled and sliced

    the juice of ½ lime

    a pinch of sugar

    salt and black pepper

    3tbsp dark soy sauce

    1tsp brown sugar

    5cm piece of fresh ginger, peeled and finely sliced into strips

    a pinch of 5 spice

    1tbsp peppercorns

    juice of ½ orange

    2-3tbsp rice vinegar

    1tbsp soy sauce

    1tbsp sesame seeds

    ½ red chilli, deseeded and finely chopped

    squeeze of lemon

    pinch of sugar

    sea salt and freshly ground pepper

    1 lime

    ½tbsp olive oil

    2 cloves garlic, sliced

    1 red chilli, sliced

    1 green chilli, sliced

    sea salt and freshly ground black pepper
