How to cook a chicken curry in 10 minutes

Indian chef and cookery book author Manju Malhi shows users a quick and easy chicken curry which is perfect when you're in a hurry. Experience our chicken curry in ten minutes recipe and make a fast and tasty dish for all to enjoy.

    You will need:

    45 ml vegetable oil
    1 medium onion
    400 g chicken fillet
    2 cloves of garlic
    1 green chilli
    ¼ tsp salt
    ¼ tsp turmeric
    ½ tsp ground cumin
    ¼ tsp ground coriander
    1 tsp tomato purée
¼ tsp garam masala or 1 tsp curry paste
    30 ml double cream

    Directions:

    1. Finely chop a medium sized onion. Crush 2 cloves of garlic with the side of a knife. Now peel away the skin, and finely chop. Finely chop a green chilli.

    2. Take the chicken, on a fresh chopping board. Chop into small bite-size pieces. Wash your hands after chopping the meat.

    3. Heat a frying pan over a medium heat. Add 3 tablespoons of vegetable oil. Then add the chopped onion, and fry for 1 minute.

    4. Put the chicken in and continue to fry for 5 to 6 minutes. The chicken will start to cook, and turn entirely white on the outside.

    5. Put the garlic and chilli into the pan, and stir. Carry on frying gently over a medium heat, until everything is golden brown, which will take 2 to 3 minutes. Keep stirring.

    6. Put 1/4 teaspoon of salt, 1/4 teaspoon of turmeric, 1/2 teaspoon of ground cumin and 1/4 teaspoon of ground coriander in the pan. Stir well.

    7. Add 1 teaspoon of tomato purée, and 1/4 teaspoon of garam masala or curry paste. Here we're using freshly made garam masala.

    8. Stir, and fold 2 generous tablespoons of double cream into the mixture.

    9. Serve hot with freshly cooked basmati rice, or naan bread.

It would take me ten minutes to measure out the spices if I hadn't already been doing it for donkeys years.

This is obviously aimed at Master Chefs because boning out and dicing a chicken takes the average person ten minutes or more. I'm no slouch and I couldn't do it much quicker. Then there's the prep. on the veg. and the "freshly-made garam masala". If the ten minutes refers solely to the cooking time that's another matter: as with most jobs, it's the groundwork that takes the time.

Making fresly cooked Basmati Rice in 10 min ?????

Theo.... Head Chef? Does that give you some kind of special insight? Granted rice may take 15mins (I cook rice every day year in year out), but if we are to be picky. It does say a "Curry in 10 mins" NOT the rice also.... However it also mentions serving with naan bread and this is certainly a meal in 10 mins.

I agree with using sunflower oil rather than olive oil. But it's odd that in the list of the ingredients required it says olive oil, then in the instructions to make the dish it states "add the vegetable oil"
As for comments about rice, I find that basmati cooked for about 10 minutes is about right. Otherwise it becomes too soft and sticky.

no he isnt nasty pet, he is saying what he thinks is right and it is right receipe says olive oil and the chef poured veg oil. Basmati rice cooks fairly fast.

How sad, how pathetic. A simple recipe for a quick cook tasty meal and it genders such hatred. Would this have happened if the recipe had been for Shepherd's Pie or other British favourite? Would it have happened if the recipe had been from any country other than Britain? Sadly, it probably would have. What an indictment on a country in general.

meryl it is not about the food, someone came in out of the blues; calling everyone to attend street party organised by Tory, a speech by cameron sending off all immigrants and leaving england only for the white people. I know what u mean; curry is associated with us Asian and triggered that person's mind into cameron speech and you know people dont like this; coz, many wont be happy with these. Sorry, if u dont like my comments.

I honestly have no idea what you are jabbering on about!!! and don't really care. This was meant to be about a curry recipe - that is all.
      • Peter 7 months ago
Meryl..... I agree totally. This is a nice helpful article on how best to do a quick easy chicken curry. And yet..... the majority of comments here are a disgraceful representation of ignorance and bias.

I am sure that this will taste fine with one exception - what is this trend for using olive oil in asian cooking???? Jamie Oliver was also at it recently. It doesn't work, tastes wrong and no self respecting asian would use it when cooking at home. Vegetable oil or or better still ghee are really the only thing to use.

Olive oil is not available in India. If you find it there , it is very expensive, people can't afford it there. Most Middle Eastern and Mid cooking rely on olive oil . A lot of Jamie Oliver cooking inspired by the Mid.
If you use to the indian cooking, and the usage of ghee , is obvious you would find the taste is differ by using olive oil, but if you are a new comer to cook indian, it will be good for your health to use olive oil. It sound as if I am making an advert for olive oil.

Olive oil burns at high temperatures which is why it isn't suitable for this kind of cooking

Been building curries since 1957 and tried all sorts, can't beat butter or it's mate ghee.
I find olive oil gives a curry a different taste so I use it to oil my mobility scooter.

What about the RICE???, it will take 15 to 20 minutes to cook. The general comment about olive oil is correct, rather use sunflower or corn oil.Enjoy anyway.

Curry in 10 minutes? It'll take 5 minutes to prep the ingredients. Furthermore you should never use olive oil in any sub-continent cooking. It has far too strong a flavour and this recipe uses at least 3 times the amount needed. In any case, what's the point in rushing - the basmati rice takes 25 minutes to steam. I suppose you could boil it in less but then you lose most of its delicate flavour. Indian food is best cooked slow to allow the flavours to infuse. If you're in that much of rush, buy it ready made and heat it in the microwave. At least you will know why it tastes so bad and won't have wasted your precious 10 minutes.

my local curry house can deliver it from phone to door in 8 mins.

The challenge here is having the rice / nan ready when the curry is - boiling rice from scratch usually takes at least 15 mins - and nans probably take 20mins + to prove before being baked.
I prefer doing things in BIG batches - and re-heat in the microwave as/when wanted.

i think a good risk of upset tummy comes with this recipe's timing
    • andy  •  1 year 3 months ago
Tosh, it takes a lot longer to get a curry with the infused spices.

a good meal is to enjoy, not to rush to cook it. BTW, it was so rush, he forgot he mentioned olive oil, but used vegetable oil instead.

my mother is thecook ever, fromm india. best ever
    • ooooooooo  •  1 year 3 months ago
This is just chicken in sauce. Hardly a balanced meal even with rice. How about a veg dish to go with it? Rice takes at least 15mins so whats the biggy with this 10min recipe? Remind me not to eat at this chef's snack bar.
    • HH  •  1 year 3 months ago
10 Minutes at home no way and the discrepancy in the ingredients and the recipe (directions), the Ingredients state olive oil and the directions state Vegetable oil. There is no olive oil in Indian cuisine.
